roastbeef and potato salad recipe

Roastbeef and potato salad recipe, very typical
Swedish summer food.
Serves four:
16 large Potatoes
5 dl (2 Cups) of Sour cream or light
Creme fraiche
1,25 dl (0,5 Cups) of Mayonnaise
2 teaspoons Dijon mustard
1 red Onion
about 12 thin slices of grilled Roastbeef
Salt & Pepper
1. Dice the potatoes into small cubes, boil them
until soft. Peel and finely chop the onion.
2. While the potatoes still are hot, blend with the sour cream or the creme
fraiche, mayonnaise, onion and mustard.
3. Season with salt and pepper and chill in refrigerator
until its cold, then serve with roastbeef or other cold cuts, and perhaps a
nice bread.
The potato salad could also be a part of a traditional smorgasbord.
