nasselsoppa recipe, Swedish nettle-soup


Nässelsoppa or nasselsoppa recipe. Swedish classic soup with nettles.

Serves four:

250 grams (0.5 pounds) fresh Nettles
1 dl (0.4 cups) fresh Chives
3 tbs Plain Flour
1.5 litres (6 cups) Water
2-3 Stock Cubes, preferably vegetable
2 Eggs
2 tbs Butter

Salt & Pepper

1. Rinse the nettles in cold water. Boil in salted water for about 10-15 minutes. Drain and finely chop, also chop the chives.

2. Melt butter, add the flour into it, and stir. When golden, add water and stock and boil for about another 10 minutes, when done add nettles and chives.

3. Season with a little salt and pepper. Served with an egg-halve per portion.
