Swedish roast easter lamb recipe, known in Sweden as Lammstek. Served with a Swedish potatisgratang, or potato gratin. Serves four: 1.5 kilo (3,3 pounds) leg or shoulder of Lamb 3 Garlic Cloves 15 sprigs fresh Rosemary Olive oil Salt & Pepper 1. Preheat oven to 180°C (350 Fahrenheit), trim any sinews or excess fat off the lamb and discard. 2. Slice the garlic in thin slices. Then use a small knife and cut 16 about 1 cm (0.5 inches) deep slits in the lamb. Press one slice of garlic and one sprig of rosemary into each slit. 3. Place the lamb in a ovenproof roasting pan and brush with olive oil. Season with pepper and then roast in oven for about 70-80 minutes. 4. Let the meat rest covered in aluminium foil for 15 minutes before carving. Serve with Swedish potato gratin, (potatisgratäng). |
